Tomato & Mango Salsa

Made entirely from fresh ingedients, this salsa makes deliciously healthy dipping option.

 

Ingredients

Serves 4

  • 4 plum tomatoes
  • 1 green chilli, deseeded
  • 1/2 red onion
  • 1/2 mango
  • 2 tbsp finely chopped coriander
  • Juice of 1 lime
  • 1 tsp white vinegar
  • Salt and freshly ground black pepper
  • RYVITA® Multiseed Thins (enough to share!)

Method

  • Halve the tomatoes and carefully peel off the skins, scoop out the seeds with a dessert spoon and chop into tiny cubes. Place in a bowl.
  • Finely dice the chilli, onion and mango and add to the tomatoes.
  • Add the lime juice, coriander and seasoning, and mix thoroughly.
  • Refrigerate for 1 hour before serving.
