Festive flapjack

Forget mince pies... this simple fruity recipe really takes the biscuit!

Ingredients

Method

Crush 200g of luscious seeded crispbread until they're about the size of oats.

Soften 100g of butter (or half butter and half low-fat cooking margarine) and mix with the crispbread flakes.

In a greased baking tray, add half of the crispbread mixture and spread over the tray. Firm with the back of a spoon.

Spread over with a generous layer of mincemeat and top with the remaining crispbread mixture. Firm again and bake for 20 minutes at 180 degrees until brown.

Allow the festive flapjack to cool, then cut it into slices and there you have it - a healthy treat the whole family will love!
