Dice 12 medium tomatoes up small. Crush & slice 3 cloves of garlic. Place into a wide bottomed saucepan thats been sprayed with low fat cooking spray. Dice the red onion, slice the leek and add to the pan on a low heat, cover and leave for 5 mins. Add the tomatoes and allow to cook down (keep lid on) for 20 mins (ish). Add the tomato puree & oregano and cook for a further 10-15 mins to reduce the mixture down & thicken it. Blitz with a hand blender to individual preference of chunkiness (I like my smooth) and pour into soup bowls. Break up Ryvita's into shapes to top the soup, grate mozzarella over the top and melt under the grill.
