Potato & Leek Soup
Hearty, warming winter soup - perfect with Ryvita Crackerbread.

Ingredients
- RYVITA® Original Crackerbread
- 2 medium leeks
- 5 medium potatoes
- 1 large carrot
- 1 pint chicken stock
Method
Melt a knob of butter in a saucepan and saute chopped leeks for about 5 minutes, without browning. Add 1 pint of chicken stock and sliced potatoes and carrot, salt and black pepper. Simmer gently until vegetables are soft - approx 30 mins. Whiz in a blender and serve hot, with Ryvita Crackerbread. If desired, serve with a swirl of creme freche.
