Chunky Chicken Filler
Easy peasy chunky chicken soup, healthy, hearty and filling
RYVITA® Recipe
Ingredients
- RYVITA® Cracked Black Pepper
- 2 skinless chicken breasts
- I medium onion, peeled and finely chopped
- 1 clove of garlic, peeled and crushed
- 1tsp groun cumin
- 1 tsp ground corriander
- 850ml chicken stock (homemade is best, shop bought is fine)
- 2tbsp extra virgin olive oil
- salt and freshly ground black pepper
- optional - 2 tablespoons of coconut milk
Method
Poach the chicken in water until it's just opaque - 10 mins (it finishes cooking in the soup) and slice into thin strips. Heat oil and add onion and garlic to cook until soft. Add corriander and cumin and pour in stock. Bring to a simmer, add coconut milk if using. Add chicken to stock mix, season with salt and pepper Stir and serve This serves four but can be stretched to 5 if taking as a work day lunch
