Rocky Soup
This is THE recipe for a cold night..a creamy meaty soup with a hint of lemon.

Ingredients
- RYVITA® Cracked Black Pepper
- 500gr beef mince
- 1/2 cup rice
- 1/2 cup minced onion
- 2 eggs
- 4 tablespoons of chopped parsley
- 1-2 lemons
- salt and pepper
- olive oil or butter
Method
In a bowl mix the mince,the rice,the onion,the parsley and one egg white.Add salt and pepper to taste and a few drops of lemon. MIx the ingredients very well. At this point have some warm water ready. In a pot melt the butter or add enough olive oil to cover the base of the pot and knead the mixture into balls(around 3cm in diameter). As the meatballs are sizzling add enough warm water to cover the meatballs,and a little bit more.(At this point you can add 1-2 tablespoons of rice if you prefer a thicker textured soup) Do not stir the meatballs at any stage. We cover the pot and turn down the heat to simmering point and leave them for 20 minutes or until the rice in the meatballs looks cooked. When they are ready,we beat the egg yolk left and the other egg with a whisk and gradually add the juice of 1-2 lemons and about a ladle full of soup. We add this mixture to the soup and we leave in low heat for a few minutes to reduce.
