Healthy Home Made Vegetable Soup

Not only it's dead easy to cook and delicious in taste but healthy as well!

RYVITA® Recipe

Ingredients

  • RYVITA® Dark Rye Crispbread
  • Chicken drumsticks (one or two) and water
  • Vegetable: carrot, broccoli, cauliflower, brussels, leek, parsnip, green peas (any vegetable that you like)
  • pepper, salt, to taste
  • flour or cream to thicken the soup

Method

Boil 2 liters of water, add chicken drumsticks, all vegetables (chopped into small cubes), salt and pepper and simmer till the meat is cooked through and vegetable soft (about 40 minutes). Mix two tablespoons of flour with half cup of water (make sure there are no lumps of undissolved flour) add to the soup and mix. For delicious creamy texture instead of flour you can add cream - pour some of the soup into a cup and add two tablespoons of cream, mix. Carefully add the mixture to the soup and mix to avoid curdling. Simmer for another 5 - 10 minutes but do not boil. Serve hot with Dark Rye Crispbread on side or broken into croutons. Enjoy!!!
