Hot and sour prawn pick me up soup
A thai style hot and sour soup to warm you up on cold winter days without breaking your New Year's resolution.
RYVITA® Recipe
Ingredients
- RYVITA® Sweet Chilli Thins
- Juice of one large lime
- 1 stalk lemon grass sliced thinly
- 1 inch piece giner stem peeled and thinly shredded
- 2 small birds eye chillis halved, deceeded
- Half ounze fresh corriander, washed and stems separated from leaves
- 1 tablespoon fish sauce
- 2 pints fresh chicken stock (or can make up from chicken stock cube)
- 4oz frozen peas
Method
1. Put one of the chillis, half of the lemon grass and ginger into the chicken stock and simmer for 15 mins. 2. Strain the stock and return to the pan and simmer. 3. Once back at simmering point add the raw tiger prawns and simmer for 5 mins. 4. Finely slice the second chilli and add it, the peas and fish sauce to the stock. 5.Simmer for 2-3 minutes. 6. Serve into four soup dishes and divide the coriander leaves and sliced spring onions to the dishes. Serve with Ryvita sweet chilli thins and enjoy!
