IMMUNE BUSTER SOUP

This robust soup based upon roasted peppers and tomatoes interlaced with flecks of green from the broccoli is bursting with ingredients known to boost the immune system.

RYVITA® Recipe

Ingredients

  • RYVITA® Cracked Black Pepper
  • 6 red peppers, halved and deseeded
  • 2 onions, finely chopped
  • 1 tablespoon fennel seeds
  • 6 large tomatoes
  • 2 tablespooons tolive oil mixed with 1/2 teaspoon turmeric and black pepper
  • 1 tablespoon tomato puree
  • 1.5 litres vegetable stock
  • 1 teaspoon finely grated fresh ginger
  • 1-2 cloves garlic, crushed
  • fresh thyme and basil, finely chopped to taste
  • 1 small head of broccoli
  • black pepper plus tiny sprinkle of salt

Method

Roast the peppers and the tomatoes in thalf the flavoured oil for 20 -25 mins. Saute the onions in the remaining flavoured oil unti soft, but not browned. After cooling, peel the skins from the charred peppers and tomatoes. Add to the onions and add the remaining ingredients and stock. Simmer gently for 30 - 40 minutes, then puree in a food processor or use a blender. Reheat if necessary and serve garnished with chopped parsley or a dollop of creme fraiche and cracked black pepper crispbread.
