Saturday Soup

This is soup made up of the week's leftover chicken or beef including the bones. Saturday is the busiest day for most households so the soup has to be quick and easy to make.

Method

1Ib of chicken, beef or stewing steak 1/2 Ib carrots 1/2 Ib potatoes 1Ib yellow yam 5 or 6 dumplings made from plain flour and water 1 sprig of thyme salt pepper 3 spring onions - diced 2 pints of water Stock (is optional) 25g Macaroni (is optional)

Boil the meat/chicken in 2 pints of water.Cut all the vegetables and add the seasoning. Make dumplings and add to soup. If required add stock and/ or macaroni. When ithe soup starts to boil allow to simmer on gas mark 3 for 30 minutes. Serves 6
