Method

Amounts are vague, as I make it a bit different every time, using up veg that needs eating! Fry an onion, couple of sticks of celery and a potato or two. When browned, add a big punnet of mushrooms (you can add fancy types too if you like), cover with lots of stock made from boulion and let simmer for about an hour.

When the veg are soft, blitz, and add about 1/2 pint of milk, and warm through.

Serve with a sprinkle of grated cheese on top, black pepper, and multi seed thins for dipping in the soup.
