Creole shrimp soup

Nothing tastes better in winter then a bit of the seaside all warmed up with hints of a veggie background.

Ingredients

  • RYVITA® Wholegrain Crackerbread
  • 1/4 cup sliced Green Onions
  • 1 clove garlic minced
  • 1 tablesppon butter
  • 2 (12 ounces) cans vegetable juice cocktail
  • 1 cup cold water
  • 1/4 cup uncooked long grain rice
  • 1/2 teaspoon coarse salt
  • 1/4 teaspoon dried thyme, crushed
  • 1 bay leaf
  • 1 (4 1/2 ounces) can small shrimp drained

Method

1. Add butter to stockpot. Sauté green onion and garlic until tender, about 1 minute.

2. Stir in vegetable juice cocktail, cold water, uncooked rice, coarse salt, dried thyme, and bay leaf.

3. Bring to a boil over high heat.

4. Reduce heat to low. Simmer 25 minutes.

5. Stir in shrimp. Simmer until heated through.

6. Remove bay leaf before serving. 1 (4-1/2 ounces) can Small Shrimp, drained
