Dad's Parsnip & Apple Soup

This is actually my Dad's recipe, and he's not known for his cooking, but is LEGENDARY for this soup. We always request it when we're visiting, and it's particularly welcoming on a cold winter's walk, or cosied up next to the fire.

RYVITA® Recipe

Ingredients

  • RYVITA® Multi-Seed Thins
  • 25g butter/margarine
  • 1 onion
  • 2 parsnips
  • 1 cooking apple
  • 1pt (600ml) vegetable stock
  • 2tbsp chopped parsley & 1/2 tsp mixed herbs
  • 1 pt milk
  • Salt + pepper to taste

Method

Chop the veg. Melt the butter in a large pan & saute the veg and apple, stirring frequently until the onion is transparent. Add the stock & herbs, then bring to the boil and reduce the heat. Cover and simmer for 30 minutes. Add the milk. Allow to cool slightly before blending. Serves 4-6.
