Curried vegetable soup
A warming vegetable soup with a kick
RYVITA® Recipe
Ingredients
- RYVITA® Cracked Black Pepper
- Butter
- Onion
- Potatos
- carrots
- parsnip
- swede
- vegetable stock
- flour
- seasoning to taste
Method
melt the butter, add the onion and fry gently until soft. Add the potatoes and sweat for 8-10 minutes. Add the rest of the vegetables and mix. Add 1 tablespoon of flour and mix. Add the stock (around 1 litre - depending upon how many veggies you have used) and bring to the boil. Season well. Add curry powder to taste. Simmer for around 20 mins.
Either serve as a chunky soup or use blender to make it smooth. Serve with Ryvita of your choice!
Keeping the basics of onion, potato and carrot I have used a variety of veggies - fabulous way to get children to eat vegetables.... I once made this soup and included 8 different vegetables... most of which my daughter claims she would never eat!
