Curried Carrot, Apple and Parsnip Soup

Ingredients
- RYVITA® Sesame Crispbread
- 1 medium onion
- 2 large carrots
- 2 large parsnips
- 1 medium cooking apple
- 2 pints of vegetable or chicken stock
- olive oil
- 1 tspn of madras curry paste
- plain flour
Method
Chop all vegetables and sweat in olive oil for 10-15 minutes until tender, sprinkle with flour to absorb oil, cook for 1 minute.Add stock and simmer for half an hour. Add peeled, sliced apple and curry paste simmer for half an hour. Blend with stick blender, pass through sieve re-heat and serve with croutons and Ryvita. Season to taste.
