Mum's Mushroom Soup - Delicious!

RYVITA® Recipe

Ingredients

  • RYVITA® Multi-Seed Thins
  • Mushrooms - a lot - I use around 500g
  • Onion x 1
  • Butter - I recommend 30 - 40 g
  • Bovril - a tablespoon
  • Flour - a tablespoon
  • Salt and Pepper to taste
  • Milk (optional) 50 mls
  • Secret Ingredients - Dill (a liittle sprinkle) and Paprika ( a small pinch)
  • Water (optional) 50 - 100 mls

Method

The secret ingredients are the Paprika and the Dill! It sounds a bit different - I know but it adds a 'punch' to this delicious hearty soup!! 1. Slice the Mushrooms and the Onion, reserve a few mushrooms for decoration. 2. Sautee the Mushrooms and Onion in Butter until soft for a few minutes or until the mushrooms are fragrant and the juices are coming out. 3. Sprinkle in the Paprika and Dill and stir. 4. Puree the entire mixture in a blender until nice and smooth. 5. Return the pureed mixture back to the pot and mix in the Bovril and the Flour - this will thicken it up. 6. Add milk and boiling water if you wish the soup to be thinner to the consistency that you would like. 7. Season with Salt and Pepper. 8. ENJOY!!
