Curried Parsnip and Cream Cheese Soup

A thick, rich and comforting soup that warms you from the inside out!

Ingredients

  • RYVITA® Cracked Black Pepper
  • 3 Parsnips peeled and finely chopped
  • 1 Onion finely chopped
  • 300ml of Chicken Stock
  • 4 tbsp of Cream Cheese
  • 25g Butter
  • 2 tbsp Medium Curry Powder
  • Drizzle of Cream
  • Salt and Course Ground Black Pepper

Method

1.Melt the butter in a saucepan and fry the onion until softened. Add the chopped parsnip, and stock and cook for 8 minutes, or until the parsnip is tender. 2.Add the cream cheese and curry powder and cook for 4 minutes. Season with salt and freshly ground black pepper. 3.I prefer the soup served chunky but it can be blended with a hand-held blender until smooth. 4.Pour into a bowl and garnish with a drizzle of cream and a sprinkling of black pepper.
