Roasted red veggies with garlic and spice, pureed until silky!

Ingredients
- RYVITA® Sweet Onion Crispbread
- 2 red peppers
- 4 tomatoes
- 1 carrot
- 1 onion
- garlic and olive oil
- 500ml stock
- dried chilli flakes
Method
Oven-roast two chopped red peppers, four juicy tomatoes, a quartered carrot, a quartered onion and a chopped clove of garlic, with two tablespoons of olive oil. This will take around 20 minutes until soft.
Put into a pan and add 500ml of hot vegetable stock, a dollop of tomato puree and a pinch of dried chilli flakes.
Blitz with a stick blender until soup is beautifully smooth. Ladle into bowls, drizzle with a little olive oil, and enjoy with a sweet onion Ryvita.
