5-C vegetable soup

This soup is my own recipe made from all the C vegetables and contain plenty of Victamin C which is good for the body defense mechanism against cold and flu in the winter

RYVITA® Recipe

Ingredients

  • RYVITA® Sweet Chilli Minis
  • 1 carrot (chopped)
  • 1 capsicum pepper (red)
  • 1 chilli (red)
  • 1 teaspoon coriander (ground)
  • 1 teaspoon cumin (ground)
  • 500ml vegetable stock
  • 1 tablespoon crème fraiche
  • 1 teaspoon corriander leaves (chopped)
  • 1 tablesoon olive oil
  • 1 tablespoon flour
  • salt and pepper

Method

1. Roughly chopped all the vegetables. 2. Heat olive oil in a pan and fry chopped carrot, capsicum, chilli, corriander and cumin for 2-3 minutes. Add in the vegetable stock. 3. Bring to the boil. Simmer for 30 minutes. 4. Add in flour. Use a hand blender and blend the soup for 10 seconds. Heat the soup till thicken. Season with salt and pepper. 5. Serve the soup hot. Garnish the soup with crème fraiche, chopped corriander leaves and Sweet Chilli Ryvita minis

    Lovely soup, hot and spicy. Full of Victamin C too. So easy to make.

    Good colour, good texture and good consistency and also using vegetables full of Victamin C. Good as a winter warmer and to prevent cold and flu symptoms
