Perfect parsnip and lip smacking lentil warmer.
Tasty, warming and nutritious, while simple to make.
- RYVITA® Wholegrain Crackerbread
- 2 parsnips, sliced and diced
- 1 onion,chopped
- 2 cloves garlic, chopped
- 2 oz red lentils
- 1 teasp cumin
- 1 teasp termuric
- chopped ginger or 1 teasp of ginger powder
- 2 tblsp cooking oil
- About half a pint of chicken stock
Put all ingredients, except lentils and chicken stock, into a pan with the oil and fry gently for five minutes, Add chicken stock and lentils and bring to the boil. Simmer gently for 20 minutes.
The soup can eithe be eaten as it is as chunky or can be put into processer to make it finer. Delicious either way!
