Spicy Butternut Squash
Spicy and creamy a delicious winter warmer

Ingredients
- RYVITA® Sweet Onion Crispbread
- Butternut squash
- Chilli's - as many as you can handle
- 1 Onion chopped
- 2tsp cumin
- 1 tin of coconut milk
- Chicken or veg stock
Method
Soften the onion over a low heat for a few minutes, then add the cumin, chilli's and diced butternut squash. Stir thoroughly then add the chicken stock (enough to cover the contents of the pan) Simmer gently for approx 20 minutes - then add coconut milk. Season to taste and enjoy with rubies croutons on a cold winters day x
