Red Lentil Winter Warmer

RYVITA® Recipe
Ingredients
- RYVITA® Pumpkin Seeds & Oats Crispbread
- Red Lentils - 200 grams
- Grated Carrots - 2
- Tinned tomatoes - 250 grams
- Dried apricots - 6 finely chopped
- Ginger - 1 tsp ground or 1 tsp fresh chopped
- Garlic - 2 cloves, crushed.
Method
Boil the Red lentils in lightly salted water for 15 minutes.
Add the grated carrots, tinned tomatoes, dried apricots, ginger and garlic and simmer for another 10 minutes.
Pour into your nicest bowls and garnish with parsley or coriander to suit.
Serve accompanied with Pumpkin Seed & Oats Ryvita Crispbread, butter and smoked salmon, cheese or pate, to suit
