Creamy coconut seafood and vegetable soup
This soup is creamy, spicy and tasty and the coconut cream gives it the heavenly flavour.
RYVITA® Recipe
Ingredients
- RYVITA® Cream Cheese & Chive Minis
- 100g mixed seafood ( mussles. prawns, squids etc)
- 2 tablespoon sliced leek
- 2 tablespoon diced carrot
- 100ml fish stock
- 100ml coconut cream
- 1 teaspoon chopped galangal
- 1 teaspoon chopped lemon grass
- 1 clove chopped garlic
- 1 tablesppon olive oil
- 1 finely chopped mild chilli
- 1 teaspoon cornflour
Method
1. Heat olive oil in a pan. Fry garlic, galanal, lemon grass,chilli, leek and carrot for 1 minute without browning. 2. Add in seafood, fish stock and coconut cream. Bring to the boil. Simmer for 10 minutes. 3. Thicken the soup with cornflour blended with 1 tablespoon of water. Serve hot with Ryvita minis.
