Courgette and cheese soup

A very easy recipe that is a great way to get ALL the family to eat courgettes!

RYVITA® Recipe

Ingredients

  • RYVITA® Multi-Seed Thins
  • 3 courgettes
  • Vegetable stock
  • Soft Cream Cheese (4 cheese triangles or similar)
  • salt and lots of pepper

Method

Dice your courgettes and put in a saucepan. Cover with vegetable stock. Bring to boil and simmer until courgettes are soft. Take off the heat stir in cheese triangles (or 100g Cream cheese) Blend with a hand blender and season.

Its as easy as that!
