Ingredients
- RYVITA® Sweet Chilli Thins
- vine tomatoes, roasted
- finely chopped green chilli, roasted
- basil, roasted
- chopped leek
- chopped celery
- smoky bacon rind
- red wine vinegar
- chicken and vegetable stock
- jar of sun dried tomatoes
- olive oil
- tablespoon of sugar
Method
roast the basil, chilli and vine tomatoes together in the oven for half an hour in a closed roasting dish, dousing the ingredients with olive oil to infuse the flavours.
in a pan, lightly fry the leek and celery together in olive oil, being careful not to colour, until they are soft. . add the red wine vinegar, the basil, chilli and tomatoes and sugar and cook for approx 10 mins. add the stock and bacon rind and bring to the boil, then simmer for approx an hour.
Skim the surface of the liquid and remove the bacon rind. Liquidise the broth and pass through a chinois or meshed/fine sieve. return to pan and bring to boil then simmer for a further 10 mins. add salt and pepper/seasoning to taste. serve with ryveta breads.
