Herby Winter Vegetable Soup

A medley of winter vegetables with herbs and wine.

RYVITA® Recipe

Ingredients

  • RYVITA® Dark Rye Crispbread
  • Leeks
  • Potatoes
  • Carrots
  • Courgette
  • Onions
  • Seasoning
  • 2 Knorr stock cubes
  • Bouquet Garni
  • Basil
  • Celery Salt
  • A splash of white or red wine
  • A slice of Ryvita dark original or Rye, cut into croutons.

Method

Wash and chop the vegetables and add to large pan. Bring to the boil, adding seasoning, stock cubes, and herbs and spices. Add a splash of white or red wine. When boiling turn down to simmer for approximately 30 minutes. Leave to cool, and blend until creamy and smooth. Heat to serve adding Ryvita croutons.

Deliciously warming for cold winter meals.
