Roast tomato, red pepper onion and chilli soup

A delicious and easy soup to prepare. Eat with ryvita spread with low fat cream cheese such as philiadelphia.

RYVITA® Recipe

Ingredients

  • RYVITA® Cracked Black Pepper
  • tomato's - 500g
  • red pepper - 1
  • red onion - 1
  • pinch of chilli powder
  • vegetable stock 300 ml
  • pinch of herbs (optional) pinch of sugar (optional)

Method

1. Quarter tomato's, cut red pepper and onion into chunks 2. Put the above onto lighly oiled tray and bake in hot oven until slightly golden and soft. 3. Take out of oven and add to vegetable stock along with chilli powder and herbs. Simmer for 10 minutes. 4. Put in blender or electric hand mixer and whizz. Put through sieve if wished to remove any pips. 5. Add extra stock to thin down if needed. 6. Serve with ryvita of choice.

    A lovely recipe, ideal for making use of an excess of home grown tomatoes. I appreciate the simplicity of the directions too - no unnecessary hyperbole .........
