Curried tomato & red lentil soup
A lovely heart warming soup which has a sumptious spiced but not too hot taste and is perfect with Ryvita, plus I have lost 8lb already this year by having this for lunch!

Ingredients
- RYVITA® Pumpkin Seeds & Oats Crispbread
- 2 large onions
- 1 tin tomatoes
- 1 garlic clove, chopped
- 1lb red lentils
- 1 tablespoon olive oil
- 1/2 pint vegetable stock
- 3-4 chopped carrots
- 3-4 stalks celery
- 3 tablespoons fresh lemon juice
- 8 tablespoons of madras curry powder
- 1 teaspoon chilli powder
Method
1) Heat olive oil, fry onions for few minutes to soften 2) When soft add garlic curry powder & chilli powder 3) Add lentils, chicken stock & tomatoes, stir occasionally, simmer for about 30 mins. 4) When lentils have softened add carrot & celery and cook for further 5-10 minutes 5) Stir in lemon juice, 6) Serve with Ryvita
