Balsamic Strawberry Eton Mess

A combination of sweet and sharp lathered in heavenly cream atop a crisp Ryvita

Method

Take the strawberries and combine them with the caster sugar and balsamic vinegar. Make sure to taste them to ensure the balance between sharp and sweet is not too powerful in either direction.

Leave to macerate for at least 30minutes (though its better after 3 hours or so!)

Then crush up the meringues and whip up the double cream until holding a soft peak and fold the two together just before assembly (no one likes a soggy meringue!).

To assemble, layer the cream/meringue mixture atop the ryvita followed by a few teaspoons of the strawberries and dive in!
