Ryvita chickpea delight

Ryvita topped with creme fraiche and a dollop of chickpea curry. sprinkled with chopped coriander for the perfect finish!

Method

Make a delicious chickpea curry by frying chopped onions and chopped garlic with (1/2 tsp)red chilli powder, (1/2 tsp)cumin,(1/2 tsp) tumeric and chopped fresh chillis. Add salt. Add a tin of chopped tomatoes and stir while it thickens. Add a couple of tablespoons of water and a tin of chickpeas. simmer. Add (1/2 tsp) ginger and (1/2 tsp) garam masala.Simmer until it has thickened and the chickpeas have absorbed all the delicious flavours. Spread the creme fraiche on the ryvita and add a spoonful of the chickpea mix. Curry followed by creme is also delicious - similar to the jam or clotted cream first in a cream tea debacle!

Sprinkle a bit of chopped coriander for a fresh taste with a spicy and cooling flavour.
