Sweet Tomato and Goats Cheese heaven
A glorious blend of nature's best flavours - baby vine tomatoes, goats cheese, a drizzle of honey and mustard dressing and a generous sprinkling of fresh mint. Too delicious to call a snack, it's my favourite summer lunch!
- RYVITA® Pumpkin Seeds & Oats Crispbread
- 4 baby vine tomatoes
- 15g goats cheese (crumbly rather than creamy)
- tablespoon of chopped fresh mint
- olive oil
- white wine vinegar
Use shop-bought dressing for convenience, otherwise make your dressing first.
In a jar mix together 1tsp mustard, 2 tsp honey, 2 tsp white wine vinegar and 6tsps olive oil.
Take 4 baby vine tomatoes and cut in half.
Place cut side down on a Pumpkin Seeds and Oats crispbread.
Top liberally with goats cheese (around 15g)
Drizzle with pre-prepared dressing
Sprinkle with mint.
