Spicy re-fried beans

This delicious recipe is a real winter warmer. It is great on its own or you can top with cheese or chicken or steak, add an extra squeeze of lemon for that extra zing!

Method

Sautee the onion, peppers, chilli and garlic until soft, add the cumin (1-2 teaspoons) and fry for a further minute. Add the tin of mixed beans and water to cover. Boil until beans are soft and water has lessened. Add salt and pepper to taste and the juice of half a lemon. Put in a blender and blend till smooth. Once smooth add back to the pan and fry until thick. Then spread thickly onto your ryvita, on its own or with cheese or chicken or steak or even salad! Add an extra squirt of lemon and Enjoy...
