SPICY CRISPY CHICKEN
A SIMPLE AND FAST CHICKEN DISH SUITABLE FOR ANY LOW FAT DIET.
- RYVITA® Original Crispbread
- 2 teaspoons mixed herbs
- 2 teaspoons dried chilli flakes
- Freshly ground salt and black pepper
- 1 egg, beaten
- 4 x 125g skinless and boneless chicken breasts
- 3 original Ryvita Crispbread
- Low fat spray
1. Preheat oven to 180 C/350F/Gas Mark 4. 2. Spray a baking tray with low fat cooking spray. 3. Put the Ryvita in a strong plastic bag and roll with a rolling pin until fine crumbs are formed. 4. Mix together the Ryvita crumbs, chilli flakes, mixed herbs, salt and pepper and place in a shallow bowl 5. Put beaten egg in another shallow bowl. 6. Butterfly the chicken breast by carefully cutting it horizotally but not all the way through and open out. 7. Dip each breast first in the egg and then in the Ryvita mix 8. Place on the baking sheet and bake for 15 - 20 minutes.
