Creamy Pea & Basil Soup with Ryvita Croutons
We love this tasty soup recipe from Hedi Hearts.
- Your favourite RYVITA® Crispbread
- 3 cups of frozen or fresh peas
- 1 tin of coconut milk
- ½ onion (diced)
- 1 or 2 garlic cloves (crushed)
- A handful of fresh basil leaves
- Salt and pepper to taste
- A dash of coconut oil for frying
First heat the coconut oil in a pan on a medium heat. Add the onion, cover and fry, stirring occasionally until softened.
Add the frozen peas , garlic, salt, pepper and fry for another 2 minutes.
Add the coconut milk, basil leaves and cook until the peas are soft.
Transfer the soup into a blender and puree the soup until very smooth. You can add water if the texture is too thick for you.
Taste and add seasoning as required. If serving hot, return the soup to the pot and bring to a simmer.
Serve, crumble in your Ryvita croutons and enjoy!
