Pea and mint soup with Ryvita croutons

This simple yet delicious green soup makes for a refreshing lunch for 4 people.


  • 1 Pumpkin Seeds & Oats Crispbread
  • 450g bag of frozen peas
  • 800ml of boiling water
  • 1 x vegetable stock cube
  • A small handful of chopped fresh mint
  • A drizzle of cream, to serve


Begin by tipping the frozen peas into a blender and pour over the hot water from a kettle. Leave the peas to defrost. Add a handful of mint and the vegetable stock to the rest. Give it a good blitz until smooth, and then pop it in the fridge to chill. Serve drizzled with cream and scattered with some chopped mint & crumbled Crispbread, we’ve used Pumpkin Seeds & Oats.
