Ingredients

1 clove garlic (3g)

2 roasted red peppers from a jar (320g)

75g almonds

1 tbsp. extra virgin olive oil (12.5g)

1 tbsp. sherry vinegar (11.4g)

1 tsp paprika (2.3g)

4 Ryvita Lightly Salted Rye Cakes (64g)

Small handful parsley (4g)

Method

  1. Toast the almonds in a dry frying pan for 3-4 minutes until they are golden on both sides.
  2. Blitz everything together in a food processor with some seasoning.
  3. Serve on the rye cakes topped with a few parsley leaves.
