Satay Chicken, Spring Onion & Roasted Chopped Peanuts

Ingredients

1 tbsp. smooth peanut butter (18g)

2 tsp low-salt soy sauce

½ clove garlic, grated

Juice of ½ lime (5g)

1 cooked chicken breast, sliced (grilled without skin) (120g)

1 spring onion, finely sliced (10g)

1 tbsp. roasted peanuts, roughly chopped (roasted and salted, 6.5g)

2 Red Quinoa and Sesame Crunchy Rye Breads

Method

1. Whisk together the peanut butter, soy sauce, garlic and lime juice then pour over the sliced chicken and stir to coat.

2. Top the Crunchy Rye Breads with the chicken, spring onion and peanuts.
