Sensational Savoury Gammon Cheesecake
Ryvita like you've never tried it before - the experts at seasoned cookery school came up with this incredibly tasty recipe.
- 200g RYVITA® Sweet Onion Crispbread
- 300g soft cheese
- 100g mascarpone
- 100g chopped gammon
- Zest & juice of 1 lemon
- 100g melted butter
- Black pepper to season
This recipe creates 4 mini cheesecakes but you could make one large one if you prefer.
Line a baking tray with grease proof paper & place 4 7cm chef rings onto the baking tray.
Using a food processor blitz the Ryvita sweet onion crispbread. Add the melted butter and mix until all the butter is stirred in.
Place the mixture evenly into the chef rings and ensure the mixture is firmly pushed down creating a Ryvita crispbread base.
In a separate bowl add the soft cream cheese, mascarpone, gammon, zest of lemon & juice. Mix thoroughly until smooth. Add black pepper to season.
Divide the cheese & gammon mix evenly between each chef ring and layer on top of the Ryvita base. Level the top off with a knife.
Place in the fridge for at least two hours before serving.
