Ingredients

1 avocado, peeled and destoned

1 tbsp extra virgin olive oil

½ lemon, juiced

4 Ryvita Multigrain Rye Cakes

8 tomatoes, sliced/halved

Pinch of chilli flakes

Method

  1. Mash the avocado in a bowl with the olive oil, lemon juice and seasoning
  2. Spread the mashed avocado onto the rye cakes and top with the tomatoes and chilli flakes
